Ingredients

  • 2 large chicken breasts, cut into bite-sized pieces
  • 8 oz fettuccine pasta
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach leaves
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook Pasta:
    Cook fettuccine pasta according to package instructions until al dente. Drain and set aside.

  2. Cook Chicken:
    In a large skillet over medium-high heat, heat olive oil. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 6-7 minutes. Remove chicken from skillet and set aside.

  3. Make Garlic Butter Sauce:
    In the same skillet, melt butter over medium heat. Add minced garlic and crushed red pepper flakes (if using), sautéing until fragrant, about 1 minute.

  4. Combine Ingredients:
    Add cherry tomatoes and spinach to the skillet, cooking until the tomatoes soften slightly and spinach wilts, about 2-3 minutes. Add the cooked chicken and pasta back into the skillet and toss to combine.

  5. Finish and Serve:
    Sprinkle grated Parmesan cheese over the pasta, stir gently, and remove from heat. Garnish with fresh parsley and serve immediately.
