Ingredients

  • 4 chicken thighs, skinless and boneless
  • 2 tablespoons honey
  • 3 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Make the Sauce: In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, salt, and pepper.
  3. Prepare the Chicken: Place the chicken thighs on a sheet pan and pour half of the honey garlic sauce over them, making sure they are coated evenly.
  4. Add Vegetables: In a separate bowl, toss the bell peppers, broccoli, and carrots with the remaining sauce. Spread the vegetables around the chicken on the sheet pan.
  5. Roast: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. You can broil for an additional 2-3 minutes for a crispy finish.
  6. Serve: Remove from the oven, garnish with chopped green onions if desired, and serve warm.
