Ingredients
- 4 chicken thighs, skinless and boneless
- 2 tablespoons honey
- 3 tablespoons soy sauce
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup carrots, sliced
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Make the Sauce: In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, salt, and pepper.
- Prepare the Chicken: Place the chicken thighs on a sheet pan and pour half of the honey garlic sauce over them, making sure they are coated evenly.
- Add Vegetables: In a separate bowl, toss the bell peppers, broccoli, and carrots with the remaining sauce. Spread the vegetables around the chicken on the sheet pan.
- Roast: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. You can broil for an additional 2-3 minutes for a crispy finish.
- Serve: Remove from the oven, garnish with chopped green onions if desired, and serve warm.
